Produced by around 400 smallholder farmers in the fertile Benti Nenka area of Guji Zone, where coffee is grown sustainably on small family farms in indigenous forests.
Here, coffee farming is closely linked to culture and is collected and processed by the EDN Ethiopian Coffee.
After being meticulously picked and sorted, the cherries are fermented in an anaerobic, pressurised, oxygen-free environment for 7-10 days as the plant's employees monitor the sugar levels to ensure the best possible result. Afterwards, the coffee is dried on shaded drying beds for 15-20 days until it reaches 11% humidity.
