The Producer:
Deiro Garcia Botina is a 34-year-old coffee producer with two farms Lord Voldemort and Lord Baltimore in Pitalito, Huila. His journey with coffee started with different courses in production, roastery, and cupping of coffee.
Coffee is not the only income in the Garcia family, as both Deiro and his wife have other jobs. Entering La Palma y El Tucán's Neighbors&Crops -program has made the entire process of selling cherries easier.
La Palma y El Tucán is famous for its innovative approach, high-quality coffee and environmental preservation. We have been working with them since 2017 and their coffee was among the very first lots we ever roasted.
This coffee is processed with LPET's new processing method, called Bio-Innovation. The LPET team draws samples from the fermentation stage of existing coffee processing, and further develops it to augment these coffee processing methods, bringing about the Bio-Innovation process. The process uses specific microorganisms meticulously selected by the laboratory team based on their ability to contribute to the ideal combination of lactic and organic acids that help to enhance the final cup profile. Lactic acid is known to produce a pleasant mouthfeel in the coffee, while other organic acids, like acetic acid, are often found in our common fruits, and are key to flavour clarity and bringing out the sweetness of the coffee.
Through the Bio-Innovation process, LPET honours the main principles of organic farming. the microorganisms are painstakingly collected and selected from the biodiversity available on the farm that has helped the LPET in the processing of their amazing coffee over the years.
