The Producer:
This is our third year working with Ombligo de Luna project and the coffee producer Luz María Colorado Hernández. Luz's farm is located in the community of Rincón Toningo, Veracruz, Mexico. At first, she was selling cherry coffee to the commodity market and wasn't really interested in cultivation. This changed after the community started working with the Ombligo de Luna project and learned more about cultivation and processing, which made her understand the vast range of flavors coffee can have. As Luz Maria says, 'When one learns more, one becomes more excited and interested.' Nowadays, she is also teaching and inspiring other farmers about varieties and processing methods, and aiming for high-quality coffees.
Luz Maria's production is very small. She is very motivated to increase these amounts in the future, but with this level of concentration on quality, it takes time. This year, her production was the three bags that Populus bought. We also invested in a drying tent, which will help Luz produce even better quality next year.
Black honey processing is a step between natural and standard honey processing, with most of the mucilage still intact. It is a complex, laborious, and expensive way to produce green coffee, but it results in a rich-bodied, flavourful coffee. Farmers start by picking only the ripest cherries from the trees. These cherries contain a high amount of sugar and acids, which are essential for fermenting. If the beans are dried too quickly, the flavors from the mucilage won’t be absorbed, and if the beans are dried too slowly, there is a chance of over-fermentation.
